I love popcorn!

Popcorn was a staple snack in my house growing up, whether it was the microwave verity, air-popped (not my favorite), or the end all be all, the coveted movie theater popcorn. When I was a child, my mom loved going to the movies and would often take my sisters and me to the movie theater. However, the biggest draw of seeing a movie was the buttery, salty movie theater popcorn.

Movie theater, microwave, and prepackaged popcorn contain unfavorable oils and artificial flavors that are not good for you, so if you want to enjoy this high-carb snack, you need to make it yourself to mitigate the unhealthy aspects.

I have paired this popcorn recipe with my beef jerky recipe to help you live the protein lifestyle, as popcorn is very low in protein, if you eat these items together you can ensure you are going to hit your protein goals for the day, all you have to do is eat the beef jerky first and then you can enjoy the popcorn guilt-free.

You do not need any special equipment to make popcorn, but tons of gadgets are available, from air poppers to pressure poppers used by street vendors in China. These gadgets can be fun to use but also take up space on your countertop or cabinet and are not required. You can even make it in a metal bowl and use aluminum foil with some holes punched in it to allow the steam to vent. Venting the steam will help avoid soggy popcorn, so crack the lid when using one.

Popcorn is best enjoyed hot and fresh, but it can also be made in advance and stored in an airtight container so it doesn’t go stale.

When it comes to flavoring your popped corn, you have many options, from the traditional salt and butter to Asian-inspired popcorn using furikake sushi seasoning.

You also have options for the type of cooking fat you use, and the fat you choose will impart additional flavor. I like coconut oil due to its health-promoting properties and unique flavor. However, you could also try tallow, sesame seed oil, olive oil, or even bacon grease.

The sky is the limit when choosing how to flavor your popcorn, so once you have the standard recipe down, feel free to experiment with different combinations of toppings and fats to see what you like best.

1-2 tablespoons coconut oil

1/3 cup organic popcorn kernels

Fine Salt

Place a medium size sauce pan over high heat.

Add coconut oil and popcorn kernels to the pan.

Swirl the pan to coat kernels with the oil and place a lid on the pan but leave a small opening to allow the steam to vent.

The kernels will start popping in a minute or two.

Once the popping slows to about 8 seconds between pops, immediately remove the pan form the heat and dump the popcorn into a big bowl

Sprinkle salt onto the popcorn, wait one minute, and enjoy.
