🔥 Guilt-Free Grilled Teriyaki Chicken 🍗

This guilt-free grilled teriyaki chicken recipe is easy to make and does not require a ton of time or special equipment, yet it’s flavorful and versatile.

I have adapted this recipe from a traditional teriyaki chicken recipe to make it healthier without sacrificing flavor by removing the added sugar and replacing the soy sauce with coconut aminos. As you may know, added sugars are not good for your health, and soy has some adverse effects on your hormones if over-consumed, and that shit is in everything.

You only need a refrigerator and a barbeque grill to make this recipe. If you don’t have a grill or the weather is not conducive to outdoor cooking, you could bake these chicken thighs and broil them at the end to char the meat or pan-fry them.

The longer you marinate the chicken, the darker the meat will look as it absorbs more of the coconut aminos. You can use the marinated to bast the thighs while cooking, but remember it was exposed to raw chicken, and to avoid getting food poisoning, you need to stop basting about halfway through the cooking process to allow the heat to kill off the harmful bacteria.

I love cooking with coconut aminos because they are soy-free and add a note of sweetness. It is a liquid made with the fermented sap of the coconut palm and sea salt.

You can store your teriyaki chicken in a sealed container in the fridge for up to a week or freeze it for up to three months. You can use this recipe for meal prep by freezing individual portions. When ready to use them, pull out what you need. They will also defrost faster in smaller portions, especially if you flatten them out before freezing.

As always, I encourage you to make this recipe your own by modifying it to fit your particular tastes. Add some sriracha sauce or a few slices of a Thai chili to the marinade if you want it spicy. If you don’t like ginger, skip it. This is your show, so make it how you like it!

Make sure to get some good grill marks by getting your grill nice and hot before you start cooking. The char will add an additional level of flavor and a bit of crunch if you do it right.

This dish is excellent on its own, but it also can be served in a salad, on top of steamed, or in fried rice.

Guilt-Free Grilled Teriyaki Chicken Recipes

Servings: 3

  • 2 cloves of garlic, minced
  • 1 inches of ginger root, minced
  • 1 tablespoon of sesame oil
  • ½ cup of coconut aminos
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of Worcestershire sauce
  • ¼ teaspoon of black pepper, fresh ground
  • 2 pounds of chicken thighs, boneless and skinless

Combine the garlic, ginger, sesame oil, coconut aminos, rice vinegar, Worcestershire sauce, and black pepper in a container or zip-top bag big enough to hold the chicken.

Stir to mix the marinade and add chicken thighs.

Seal and let marinate for at least one hour or overnight.

Preheat your grill on high heat.

Grill chicken thighs for approximately 5 minutes on each side or until an internal temperature of 165 degrees is reached and the outside of the chicken has started to char.
