🥩 Ground Beef & Cheddar Scramble 🧀🍳
This ground beef and cheddar scramble recipe packs a whopping nine hundred and forty-three calories and sixty-seven grams of protein and can be enjoyed any time of day.
An immersion blender is used in this recipe to make the eggs extra fluffy. If you do not have an immersion blender, you can use a whisk or a fork to scramble the eggs, but an immersion blender will do it in half the time and make the eggs super frothy, resulting in very fluffy eggs.
You will know the eggs are done cooking when they no longer appear watery. It’s important not to overcook the eggs, or they will dry out, so as soon as they are cooked, add the cheese and turn off the heat.
This dish can be stored in an air-tight container in the fridge for one week, but it’s best just after it is cooked. Re-heated eggs almost always come out dry and rubbery.
Scrambles are a great way to use up any leftovers you may have lying around. You can substitute the ground beef with steak, sausage, or bacon, but you may need to adjust the ratios. As far as the cheese is concerned, you can mix it up and use any cheese you like. Pepper jack will give this dish a nice little kick, or try mozzarella cheese.
Some caramelized onions would also make a great addition to this dish. You can also add a splash of milk or cream to the egg mixture to make the eggs extra fluffy, but this is unnecessary, especially if you stay away from dairy. If that’s you, try parmesan cheese, as it is very low in lactose and may not affect you the same way other cheeses would.
This dish can be garnished with green onions, parsley, or even cilantro to give it a south-of-the-border twist.
