Creamy Buffalo Chicken Wrap

The Creamy Buffalo Chicken Wrap is so good you won’t miss the carbs. I love this recipe because it’s versatile, low-carb, and so delicious you’ll want to eat it every day.

You can use whatever buffalo sauce you want, but I love Primal Kitchen’s buffalo sauce; it tastes great! It’s made with avocado oil and cayenne pepper and does not have any artificial ingredients. The recipe calls for one to three tablespoons of buffalo sauce, so you can add more or less depending on how spicy you like it. I like it spicy but not too spicy, so I use about two tablespoons. If you don’t like any spice you could substitute my protein ranch dip to make a creamy cool ranch wrap.

I use and recommend Kirkland brand canned chicken breast from Costco for this recipe. It tastes great, and it’s so convenient to pull a can from the pantry to make a list minute meal. You could also use a rotisserie chicken or boiled chicken.

You have a few options if you want a low-fat version of this recipe. First, you could omit the shredded cheddar cheese or substitute it for low-fat cheese. Secondly, you could replace the cream cheese with low-fat cream cheese or low-fat laughing cow cheese wedges.

When I said this recipe was versatile, I meant it. You can eat the chicken mixture by the spoonful, use it like chicken salad on a sandwich, or use it as a dip for rice crackers, tortilla chips, or pita chips. As for the cottage cheese wrap, it can be used to make pizzas or any kind of sandwich or wrap as a low-carb alternative to bread.

Recipe

Serves: 2

Creamy Buffalo Chicken

Ingredients:

  • 1 (12.5) Oz Can Chicken Breast
  • 1/4 Cup Cottage Cheese
  • 1/4 Cup Shredded Cheddar Cheese
  • 2 Tbsp Buffalo Sauce
  • 1 Tbsp Cream Cheese
  • 1 Tbsp Chives or green onions

Instructions: 

  1. Add chicken, cottage cheese, shredded cheese, cream cheese, and buffalo sauce to a microwave-safe bowl.
  2. Mash and mix everything together with a fork until smooth.
  3. Microwave for 1 minute and mix until cheese is melted.
  4. Thinly slice the chives and sprinkle on top of the dip.

Cottage Cheese Wrap

Ingredients:

  • 8 oz cottage cheese
  • 2 large eggs
  • 2 Tbs Parmesan Cheese
  • Pepper to taste

Instructions: 

  1. Blend all ingredients together.
  2. Spread out in one thin layer on parchment paper on a backing sheet.
  3. Bake at 350 for 30 to 45 minutes.
