Most modern ovens have a broiler and if yours doesn’t check your toaster oven as it may have a broil setting as well. In a pinch, you could use a torch to melt and brown the cheese, but be careful not to burn yourself or anything else.

To slice the green onions, once washed cut off the root end about an inch from the bottom using a chefs knife or kitchen shears. The cut the pieces in half and repeat once again. Now line up the pieces in a bundle and process to cut or slice the bundle into 1/8th of an inch pieces. This will save you a minute or two of slicing.

If you are making this ahead of time I would stop following the recipe after the initial baking. Then when your ready to eat it, microwave your portion for a minute and then continue following the recipe to melt the cheese on top. This dish will store in the fridge for up to a week, you could also freeze it for up to 3 months.

Depending on your dietary preferences, you could add a variety of different spices into the ground beef mixture to add more flavor to this dish like taco seasoning, garlic powder or some smoked paprika for a little kick. Eating this dish with a side of shredded lettuce, onions, tomatoes, and pickles will give you close to the full cheeseburger experience, and if you throw some bacon up on that, you’ll have a bacon cheeseburger casserole. You could also add bread or cornflake crumbs on top of the casserole just before you melt the cheese for a bit of a crunch. To keep it low-carb, replace the bread crumbs with pork rind crumbs, also known as pork panko.

  • 6 Eggs
  • 2 Teaspoons of Salt
  • 2 Pounds of Ground Beef
  • 4 Ounces of Mild Cheddar Cheese, Sliced
  • 2 Green Onions, Washed and Thinly Sliced

Preheat oven to 350 degrees F.

Combine eggs and salt in a medium size bowl and mix to scramble the eggs.

Add the ground beef and mix with egg mixture until combined.

Grease a baking dish or cast iron skillet and add the ground beef mixture to it. Level out the mixture with a spatula.

Bake at 350 degrees F for 45 minutes.

Remove the casserole from the oven and preheat the broiler to high.

Spread the cheese slices evenly on top of the casserole and place under the broiler for 3-5 minutes or until the cheese is melted and starts to brown.

Carefully remove the casserole from the broiler and let it cool for 5 minutes.

Sprinkle the sliced green onions on top and enjoy!
