Bacon and Cheddar Egg Bites 


Egg bites are a convenient and portable dish you can eat as a snack or a meal. This bacon and cheddar egg bites recipe packs a whopping forty-six grams of protein and only five grams of carbohydrates per serving.
A muffin tin or silicon muffin liners are used to form the egg bites. I prefer the silicon muffin liners because they are easier to clean, and you can leave the egg bites in them until you’re ready to serve them. A traditional muffin tin will work well if you grease it with butter beforehand.
When checking for doneness, stick a toothpick into one of the egg bites, and if it comes out clean, it is done. If not, continue to bake them and recheck for doneness often to avoid overcooking them.
Egg bites can be made as a meal prep and stored in an air-tight container in the fridge for up to one week.
You have so many options when it comes to customizing your egg bites. You can replace the bacon with any meat you like; the same goes for the cheese. You can also add vegetables as you see fit.

Bacon and Cheddar Egg Bites Recipe

- 12 eggs
- ¾ cup cottage cheese
- 1/2 a pound of bacon, cooked and crumbled
- 1 cup cheddar cheese, graded
- 1 teaspoon of Salt
- 1/2 teaspoon of fresh ground black pepper
Place all ingredients in a medium-sized bowl and mix until well combined.
Grease 6 muffin tin wells with butter or use 6 silicon muffin liners; fill each well 3/4 full with the egg mixture.
Bake at 350° for 15 to 20 minutes or until a toothpick comes out clean.
Let cool for 5 minutes and serve.
